culinary: from snacks to star cuisine


A number of new restaurants have sprung up in South Tyrol, where high-level cooking is done with local products. Here, the lightness of the south meets alpine tradition. In addition to speciality restaurants, over 400 mountain huts provide simple pleasures - fast food is a foreign word here. In Algund near Merano, cooking is radically local. The historic, listed Gasthof zu blauen Traube opened as a new inn in 2019 and offers local specialities in the best tradition - under the motto: what was good should always remain so. In the Apostelstube of the Hotel Elephant in Bressanone there is a modern innovative cuisine, awarded with a Michelin star, served in the exclusive Art Deco ambience of the 1920s. The cuisine of the AO in Bressanone is purist, modern, product-focused and inspired by curiosity. The fact that one of the two chefs worked at NOMA in Copenhagen and the other comes from South Tyrol creates a skilful blend of local connection and Nordic influences.
